Well in VMware Tools there is a nice little feature called Shink, its lets you reclaim all the free space within the VM. Run your VM, go Applications-> Utilities-> Disk Utility-> choose your partition in the list -> Erase tab -> Erase Free Space button -> choose fastest method and run. As I noted above this will not actually make the vmdk files any smaller so a command line tool on Windows called vmware-vdiskmanager.
